Suso&#8217; Santan"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">ESCARGOT A LA TORAJA<\/span><\/p>\n<p><span style=\"font-weight: 400;\">(suso\u2019 santan)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">a la Dorce and Mama Tiku<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">INGREDIENTS:<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">1 litre of suso\u2019 (small snails from the rice fields)<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">HERBS\/SEASONING\/SPICES:<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">A quarter of coconut, put some water to make coconut milk (santan) twice<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Put the first and second coconut milk in two separate bowls<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">2 stalks of lemongrass-crushed<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">pounded together:<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 cloves of garlic<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 cloves of red onion<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">salt<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">METHODS OF COOKING:<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">&#8211; wash and soak the snails overnight so that the sand &amp; dirt are flushed out<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; in the morning, break the back &amp; sharp part of the snails, so that it\u2019s open, wash again<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; bring to boil the second coconut milk, stir in the mixture of spices<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; when boiled, put in the snails<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; when the snails mixture is boiling again, put in the first coconut milk until all snails are covered<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211; wait for 10-15 minutes<\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8211;
